Ingredients (view qty in metric system instead)
1 pound dried pinto beans, picked through and rinsed 1 medium onion, peeled and chopped 4 slices bacon, chopped 4 medium cloves garlic, peeled and thinly sliced 1 fresh jalapeno chili, stemmed and halved lengthwise
Directions
Place pinto beans in a large bowl with water to cover. Let beans soak overnight.
Drain beans and transfer to a large pot. Add enough water to cover beans. Stir in onion, bacon, garlic, jalapeno and salt. Bing to a boil over medium heat, stirring occasionally. Reduce heat and simmer beans about 90 minutes, stirring occasionally, until tender and creamy.
Serves 4 to 6.
