Ingredients (view qty in metric system instead)
Filling: 14 ounce package frozen sweet dark cherries, not thawed 1/4 cup sugar 2 tsp. cornstarch 1/4 tsp. ground cinnamon
Topping: 3/4 cup all purpose flour 1 tbsp. sugar 1/4 tsp. baking soda 1/4 tsp. baking powder 1/8 tsp. salt 1 1/2 tbsp. cold butter, diced 1/3 cup buttermilk
Directions
For Filling: Lightly butter the inside of a 9 inch glass or ceramic pie plate. Combine frozen cherries, sugar, cornstarch and cinnamon in a large saucepan over medium heat. Cook 3 minutes, stirring occasionally. Transfer filling to the prepared dish.
For Topping: Preheat oven to 425 degrees. Whisk together flour, sugar, baking soda, baking powder and salt in a medium bowl. Cut in butter until coarse crumbs form. Stir in buttermilk just until combined. Drop dough in four mounds over filling. Bake cobbler about 25 minutes until topping is golden and filling is bubbly. Transfer to a rack and cool slightly before serving.
Serves 4.
