Ingredients (view qty in metric system instead)
1 1/2 cups chocolate cookie crumbs 1/4 cup melted butter 2 tbsp. sugar 1 envelope unflavored gelatin 1/4 cup cold water 3 large eggs, separated 7 tbsp. sugar 1/4 cup + 1 tbsp. Kahlua 2 tbsp. vodka 1/2 cup heavy or whipping cream
Directions
Mix together cookie crumbs, butter and sugar until moistened. Press into bottom of 9 inch springform pan. Refrigerate until firm. Sprinkle gelatin over water and let stand 5 minutes. Set over pan of simmering water and stir until melted. Beat together egg yolks and 4 tbsp. sugar until thick and light colored. Whisk in melted gelatin. Stir in Kahlua and vodka. Set over bowl of iced water and stir until thickened, about 5 minutes. Beat egg whites to soft peaks. Gradually add 3 tbsp. sugar and beat to stiff, shiny peaks. Fold into gelatin mixture. Beat cream to stiff peaks. Fold into gelatin mixture. Spoon over crust and refrigerate at least 3 hours or overnight. For topping: Beat 1 cup cream to soft peaks. Add 3 tbsp. Kahlua and 2 tbsp. sugar and beat till stiff. Swirl over pie. Garnish with chocolate chips or chocolate curls.
Makes 1 pie.
