Ingredients (view qty in metric system instead)
2 1/4 cups all purpose flour 1 tsp. baking soda 1/4 tsp. salt 1 cup butter, room temperature 1 cup brown sugar 1/2 cup sugar 2 large eggs 1 tsp. vanilla extract 12 ounces white chocolate chips 1 cup coarsely chopped unsalted pistachios
Directions
Preheat oven to 350 degrees. Sift together the flour and baking soda in a medium bowl. Stir in salt. Cream together butter and both sugars in a large bowl. Beat in eggs and vanilla. Gradually add flour mixture. Beat until well blended. Stir in the white chocolate and pistachios. Drop rounded teaspoonfuls of dough onto ungreased cookie sheets, spacing 2 inches apart. Bake cookies 10 to 12 minutes until lightly browned-cookies will feel underdone. Let cookies cool 3 minutes on pan. Transfer to racks and cool completely. Store cookies in an airtight container at room temperature.
Makes about 4 dozen cookies.
