Ingredients (view qty in metric system instead)
1/2 cup solid vegetable shortening 1/2 cup softened margarine 1 cup brown sugar 1/2 cup granulated sugar 1/2 tsp. baking powder 2 large eggs 1 tsp. vanilla extract 2 1/4 cups all purpose flour 1 cup white chocolate chips 1 cup chopped macadamia nuts 1 cup sweetened shredded coconut
Directions
Preheat oven to 375 degrees. Lightly coat a sheet pan with nonstick spray. Cream together shortening and margarine in a large bowl. Beat in both sugars and baking powder until well combined. Beat in eggs, vanilla and flour. Stir in white chocolate chips, macadamia nuts and coconut. Drop by teaspoonfuls onto prepared pan. Bake 8 to 12 minutes until cookies are set and lightly browned.
Makes about 5 dozen cookies.
