Ingredients (view qty in metric system instead)
2 cups chocolate wafer cookies 4 tbsp. melted butter 24 ounces cream cheese, softened 1/2 cup sugar 3 large eggs 1 tsp. vanilla extract 12 ounces chopped white chocolate 1/2 cup half&half
Directions
Preheat oven to 325 degrees. Tightly wrap the outside of a 9 inch springform pan with foil. Grind cookies to crumbs in a food processor. Add butter and blend until evenly moistened. Press into the bottom of springform pan. Refrigerate. Beat cream cheese in a large bowl until smooth. Gradually beat in sugar. Add eggs one at a time, beating well after each addition. Beat in vanilla, melted white chocolate and half&half. Pour over prepared crust. Place cheesecake in a roasting pan and fill with hot water to come 2 inches up side of springform pan. Bake 50 to 60 minutes until center is set. Cool 30 minutes at room temperature then refrigerate at least 8 hours. Remove pan sides and slice.
Serves 12 to 16.
