Ingredients (view qty in metric system instead)
2 1/2 cups all purpose flour 1 tsp. baking soda 1/4 tsp. salt 1/4 tsp. ground nutmeg 1 cup butter, room temperature 1 cup sugar 1/4 cup unsulfured molasses 2 large eggs 1 tsp. vanilla extract 1 1/2 cups chopped, roasted, unsalted cashews 1/2 cup white chocolate chips
Directions
Sift together flour and baking soda into a medium bowl. Stir in salt and nutmeg. Beat together butter, sugar and molasses in a large bowl until fluffy. Beat in eggs and vanilla. Stir in flour mixture, cashews and white chocolate chips. Refrigerate cookie dough at least 1 hour or overnight.
Preheat oven to 350 degrees. Grease 2 large cookie sheets. Drop dough by rounded tablespoonfuls onto the prepared pans, spacing 2 inches apart. Bake cookies about 12 minutes until golden. Cool on pans 2 minutes. Transfer cookies to racks and cool completely. Store cookies in an airtight container at room temperature.
Makes about 3 dozen cookies.
