Ingredients (view qty in metric system instead)
Cake: 2 1/2 cups all purpose flour 1/2 cup unsweetened cocoa powder 3 tsp. ground cinnamon 1 1/2 tsp. ground nutmeg 1 1/2 tsp. salt 1 tsp. ground cloves 1 tsp. baking powder 1/4 tsp. baking soda 1 cup softened butter 1 1/2 cups sugar 4 large eggs 1/2 cup crewed coffee 1 apple, peeled, cored and coarsely grated 12 ounces chopped white chocolate 1/2 cup golden raisins
Glaze: 5 tbsp. heavy or whipping cream 4 tbsp. melted white chocolate 1 tbsp. lemon juice 2 tsp. light corn syrup
Directions
For Cake: Preheat oven to 350 degrees. Butter and flour the inside of a 9 inch ring cake pan. Sift together the flour, cocoa powder, cinnamon, nutmeg, salt, cloves, baking powder and baking soda in a medium bowl. Beat together the butter and sugar until light and fluffy in a large bowl. Add the eggs one at a time, beating after each addition. Beat in the flour and coffee in 3 additions. Mix in the apples, white chocolate and raisins until combined. Scrape the batter into the prepared pan and spread evenly. Bake 75 to 80 minutes until cake is springy and a toothpick comes out clean. Transfer the pan to a rack and cool cake 15 minutes.
Invert pan onto the rack and release cake. Remove pan and cool cake completely.
For Glaze: Bring the cream to a simmer in a small saucepan. Add melted white chocolate, lemon juice and corn syrup and stir until smooth. Cool glaze slightly, then drizzle over top of cake. Let cake stand about 15 minutes until glaze is set.
Serves 12.
