Ingredients (view qty in metric system instead)
Sauce: 1/2 cup thin sliced onion 2 tbsp. butter 1/2 cup fine chopped green bell pepper 1 small bay leaf 1/2 cup ketchup 3/4 cup tomato juice 1 tsp. salt dash tabasco sauce 1 whole clove 1/2 tsp. sugar 1 1/2 tbsp. all purpose flour 3 tbsp. water
Pork Chops: four 1 1/2 inch thick pork chops 1/4 tsp. salt 1/4 tsp. pepper 1 cup all purpose flour 1 1/2 tsp. butter 1 1/2 tsp. vegetable oil
Directions
For Sauce: Combine onion and butter in a small saucepan. Cook over medium-low heat, stirring occasionally, until onion is softened. Stir in bell pepper, ketchup, tomato juice, salt, tabasco, clove and sugar. Cover and simmer 30 minutes, stirring occasionally. Whisk together flour and water in a small bowl until smooth. Stir mixture into sauce and simmer until thickened, stirring frequently. Discard bay leaf and clove.
For Pork Chops: Combine salt, pepper and flour in a pie plate. Dredge chops in flour to coat. Heat butter with oil over medium-high heat in a large skillet. Add chops and brown on both sides. Add sauce. Cover and simmer about 1 hour until chops are tender.
Serves 4.
