Ingredients (view qty in metric system instead)
1 1/2 cups all purpose flour 2 tsp. baking powder 1 tsp. baking soda pinch salt 1/8 tsp. cinnamon 6 tbsp. butter, room temperature 2/3 cup sugar 2 large eggs 1/2 cup milk 1/2 cup watermelon juice 1/2 cup seedless watermelon pulp 1/2 cup raisins few drops red food coloring
Directions
Preheat oven to 350 degrees. Grease a 12 cup muffin tin or line with paper muffin cups. Sift together flour, baking powder, baking soda, salt and cinnamon in a large bowl. Cream together butter and sugar in a separate bowl. Beat in eggs, milk, watermelon juice, watermelon pulp and raisins. Stir watermelon mixture into flour just until evenly moistened. Use food coloring to tint the batter a watermelon color if desired. Divide batter between prepared muffin cups, filling each about 2/3 full. Bake muffins 25 minutes until a toothpick comes out clean. Transfer muffins to a rack and cool completely. Store muffins in an airtight container.
Makes 12 muffins.
