Ingredients (view qty in metric system instead)
4 cups plus 1 tbsp. milk 1/2 cup medium grain white rice 1/2 cup sugar 1/2 tsp. ground cinnamon 1/4 tsp. salt 1 1/2 tsp. cornstarch 3 large eggs 1/2 cup dried cherries 2 tsp. vanilla extract 1 tsp. lemon juice
Directions
Combine 4 cups milk, rice, sugar, cinnamon and salt in a large saucepan. Heat to a boil over medium high heat, stirring frequently. Reduce heat to medium and simmer about 25 minutes, stirring occasionally, until rice is very tender. Whisk together remaining 1 tbsp. milk and cornstarch in a large bowl until smooth. Whisk in eggs. Whisk in the rice mixture until blended. Return the mixture to the saucepan. Add cherries to the rice mixture and cook, stirring, over low heat until the mixture comes to a boil. Stir in vanilla and lemon juice. Serve pudding warm.
Serves 6.
