Ingredients (view qty in metric system instead)
1 pound small red potatoes, quartered 1/4 cup water 1/4 cup prepared picante sauce 1 tbsp. lime juice 1 tbsp. vegetable oil 1/4 tsp. salt 1/8 tsp. pepper 1 large tomato, seeded and chopped 1/2 cup sliced olives 1/4 cup sliced green onions 1 tbsp. chopped cilantro leaves
Directions
Combine potatoes and water in a 2 quart microwaveable casserole dish. Cover and microwave potatoes on High about 9 to 11 minutes until tender. Drain potatoes. Meanwhile, stir together picante sauce, lime juice, oil, salt and pepper in a small saucepan. Cook, stirring, over low heat until warm. Pour the picante mixture over the cooked potatoes. Add tomato, olives, green onions and cilantro and toss well to coat. Serve potato salad warm.
Serves 4.
