Ingredients (view qty in metric system instead)
Dressing: 1/4 cup red wine vinegar 1 tsp. crumbled, dried thyme 1/2 cup olive oil 1/4 tsp. salt 1/4 tsp. pepper
Salad: 9 cups mixed salad greens 1 1/2 pounds Granny Smith or Golden Delicious apples, peeled, cored and thickly sliced 1 tbsp. sugar 1 cup crumbled Roquefort cheese 1/2 cup tasted, chopped walnuts
Directions
For Dressing: Whisk together vinegar and thyme in a small bowl. Gradually whisk in oil. Whisk in salt and pepper.
For Salad: Place salad greens in a large bowl. Heat oil in a large skillet. Add apples to the skillet and sprinkle with sugar. Cook apples about 6 to 8 minutes, stirring frequently, until crisp tender and lightly browned. Add warm apples to the salad along with the Roquefort and walnuts. Toss salad well. Drizzle the dressing over the salad and toss to coat. Serve salad immediately.
Serves 4 to 6.
