Ingredients (view qty in metric system instead)
2 large eggs, separated 1/2 cup brown sugar 1 tbsp. all purpose flour 1/2 tsp. ground cinnamon 1/8 tsp. salt 1/4 cup melted butter 1/2 tsp. vanilla extract 1 cup dark corn syrup 1 cup chopped walnuts 1 unbaked 9 inch pie shell
Directions
Preheat oven to 350 degrees. Beat yolks until light and fluffy in a large bowl. Add sugar, flour, cinnamon, salt, butter, vanilla and corn syrup and mix well. Beat whites in a separate bowl until stiff peaks form. Fold 1/4 of whites into yolk mixture. Fold in remaining whites along with 3/4 cup walnuts. Scrape into pie shell and sprinkle top with remaining 1/4 cup walnuts. Bake about 50 minutes until a tester comes out clean. Serve warm or cold.
Makes one 9 inch pie.
