Ingredients (view qty in metric system instead)
Walleye: 1 cup plus 2 tbsp. all purpose flour, divided 1/4 tsp. salt 1/8 tsp. pepper 2 1/2 cups grated parmesan cheese 3 large eggs 1/4 cup milk four 6 to 8 ounce walleye fillets 1/2 cup melted butter
Sauce: 2 tbsp. dry white wine 2 tbsp. fresh lemon juice 1/2 cup butter, diced 1 tsp. chopped fresh parsley 1 1/2 tsp. drained capers(optional)
Directions
For Walleye: Preheat oven to 350 degrees. Whisk together 1 cup flour, salt and pepper in a shallow pie pan. Stir together remaining 2 tbsp. flour and parmesan in another pie plate. Whisk together eggs and milk in a third pie plate. Dredge walleye fillets in flour, shaking off excess. Dip completely in egg mixture then coat with parmesan. Heat butter in a large skillet. Add coated fillets and cook about 2 minutes per side until golden brown. Transfer fillets to a lightly greased baking sheet. Bake 6 to 9 minutes until fish is cooked through. Meanwhile, prepare sauce.
For Sauce: Boil wine and lemon juice in a small saucepan until reduced to 2 tbsp. Reduce heat to low and gradually add butter, whisking between each addition until melted-do not let simmer. Add parsley and capers. Serve sauce over walleye.
Serves 4.
