Ingredients (view qty in metric system instead)
2 tbsp. butter 1 medium onion, peeled and chopped 1 pound Granny Smith apples, peeled, cored and diced 1 tbsp. curry powder 2 1/2 cups chicken broth 1/2 cup heavy or whipping cream 1/4 tsp. salt 1/4 tsp. pepper sour cream
Directions
Melt butter in a large saucepan over medium heat. Add onion and cook 4 minutes, stirring occasionally. Add apples and cook about 3 minutes until crisp tender, stirring occasionally. Add curry and cook, stirring, 15 seconds. Stir in broth. Simmer about 10 minutes until apples are tender. Add cream and continue to simmer 5 minutes. Season with salt and pepper. Ladle soup into bowls and garnish with dollops of sour cream. Serve warm.
Serves 4.
