Ingredients (view qty in metric system instead)
1 pound ground venison 1/2 pound ground sweet Italian sausage 1/2 pound ground sirloin 1 large egg 1 cup Burgundy wine 3/4 cup finely shredded orange peel 1/4 tsp. salt 1/4 tsp. pepper
Directions
Mix the venison, sausage, sirloin, egg and wine in a large non-metallic bowl. Blend well. Turn mixture out onto a sheet of wax paper and form into a 3x4 inch rectangle, about 1 inch thick. Sprinkle loaf with orange peel, salt and pepper. Roll loaf into a cylinder. Wrap tightly in foil. Place foil-wrapped loaf on a hot grill and cook 30 minutes, turning at 15 minutes, 25 minutes and 30 minutes. Reduce heat and continue cooking about 30 minutes until meatloaf reaches 165 degrees. Let loaf stand a few minutes before slicing.
Serves 4.
