Ingredients (view qty in metric system instead)
4 ounces finely diced onion 2 ounces finely diced celery 2 ounces olive oil 2 large eggs 4 ounces tomato juice 1 1/2 pounds ground venison 4 ounces dry breadcrumbs 1 tsp. dry basil 1 tsp. dry parsley flakes 1/4 tsp. salt 1/4 tsp. pepper
Directions
Preheat oven to 350 degrees. Coat a sheet pan lightly with cooking spray. Heat oil in a medium skillet. Add onion and celery and cook until tender. Remove pan from heat and let cool. Whisk together eggs and tomato juice in a large bowl. Add onion mixture, venison, breadcrumbs, basil, parsley flakes, salt and pepper. Mix well with your hands. Using a small scoop or a tablespoon, scoop meat mixture and roll into balls. Place meatballs on prepared pan. Bake meatballs about 30 minutes until browned and cooked through. Serve with your favorite pasta and sauce.
Makes about 2 to 3 dozen meatballs.
