Ingredients (view qty in metric system instead)
1/4 head iceberg lettuce, shredded 2 medium tomatoes, cored and diced 2 avocados, peeled, pitted and mashed 1 tsp. fresh lemon juice 1/8 tsp. salt 1/8 tsp. pepper corn oil six 6 inch corn tortillas 16 ounce can refried beans prepared salsa
Directions
Mix lettuce and tomatoes in a large bowl. Combine mashed avocado, lemon juice, salt and pepper in a separate bowl. Pour vegetable oil into a large skillet to 1 inch deep. Heat oil to 350 degrees. Add tortillas in batches and fry 30 seconds. Flip tortillas and fry an additional 15 seconds. Drain tortillas on paper towels. Heat refried beans in a medium saucepan, stirring frequently. Spread beans on tortillas. Top with lettuce-tomato mixture then avocado mixture. Garnish with salsa and serve
Serves 6.
