Ingredients (view qty in metric system instead)
1/3 cup chopped cashews one 9 inch frozen pie shell, thawed 3 tbsp. butter 3 medium zucchini, thinly sliced 2 cloves garlic, peeled and minced 1/4 tsp. dried dillweed 1/4 tsp. salt 1/8 tsp. pepper 3 large eggs, beaten to blend 1 cup cubed Monterey Jack cheese 2 tbsp. chopped fresh parsley leaves
Directions
Preheat oven to 325 degrees. Sprinkle cashews evenly over pie crust. Melt butter in a small skillet over medium heat. Add zucchini and garlic. Cook 4 to 5 minutes until zucchini is softened, stirring occasionally. Sprinkle zucchini with dillweed, salt and pepper and toss lightly to combine. Spoon zucchini mixture into crust. Pour beaten eggs over vegetables and sprinkle with Monterey Jack and parsley. Bake about 45 minutes until filling is set. Serve warm.
Serves 6 to 8.
