Ingredients (view qty in metric system instead)
1 large red bell pepper, stemmed, seeded and cut lengthwise into strips 1 cup small cauliflower florets 1 cup peeled seeded cucumber, cut into wedges 1 red jalapeno chile, stemmed, seeded and sliced into rounds 1 cup white wine vinegar 1 cup fresh mint leaves 1/2 cup sugar 1/2 tsp. salt
Directions
Combine bell pepper, cauliflower, cucumber and jalapeno in a medium bowl. Combine vinegar, mint, sugar and salt in a medium saucepan. Heat to a boil, stirring until sugar dissolves. Transfer mixture to a medium bowl and cool completely. Strain cooled mixture over vegetables. Cover and let vegetables stand 2 hours at room temperature. Refrigerate until ready to serve.
Makes about 3 cups pickles.
