Ingredients (view qty in metric system instead)
Vegetable Patties: 8 ounces chopped broccoli 8 ounces chopped zucchini 8 ounces chopped green beans 1 medium onion, peeled and finely chopped 1 clove garlic, minced 2 cups fine dry breadcrumbs 1/4 cup all purpose flour 2 tbsp. heavy or whipping cream 1/2 tsp. salt 1/2 tsp. pepper vegetable oil
Tomato Sauce: 6 tbsp. butter 10 tomatoes, peeled, seeded and chopped 2 cloves garlic, minced 1/2 tsp. salt 1/2 tsp. pepper
Directions
For Vegetable Patties: Add broccoli, zucchini and beans to a large saucepan of boiling salted water. Cook until tender. Drain vegetables well. Transfer vegetables to a blender and add onion and garlic. Puree vegetable mixture and transfer to a large bowl. Mix in breadcrumbs, flour, cream, salt and pepper. Cover and refrigerate 30 minutes. Scoop mixture into 3 inch balls. Flatten into patties. Add vegetable oil to a large, deep skillet to a depth of 3/4 inch. Add patties and cook until browned, about 3 minutes per side. Drain on paper towels.
For Tomato Sauce: Melt butter in a large saucepan. Add tomatoes, garlic, salt and pepper. Simmer about 60 minutes, stirring occasionally, until sauce is thickened.
Serves 4.
