Ingredients (view qty in metric system instead)
1 cup uncooked orzo or small pasta shells 1/2 tsp. finely grated lemon peel 1 1/2 tbsp. fresh lemon juice 1 tbsp. olive oil 1 medium carrot, peeled and grated 4 radishes, thinly sliced 1/3 cup chopped green onions 1/4 tsp. salt 1/4 tsp. pepper
Directions
Bring a medium saucepan of water to a boil. Add pasta and cook until just tender, stirring frequently. Drain pasta and cool under cold running water. Drain pasta again. Combine lemon peel and juice in a medium bowl. Whisk in olive oil. Stir in shredded carrot, radish slices, green onions, salt, pepper and cooked pasta. Let salad stand 10 minutes before serving.
Serves 2.
