Ingredients (view qty in metric system instead)
4 cups + 1 tbsp. milk 1/2 cup white rice 1/2 cup sugar 1/2 tsp. ground cinnamon 1/4 tsp. salt 1 1/2 tsp. cornstarch 3 large eggs 1/2 cup dried cherries 2 tsp. vanilla extract 1 tsp. lemon juice
Directions
Stir together 4 cups milk, rice, sugar, cinnamon and salt. Bring to boil, stirring often. Simmer until rice is tender, approximately 25 minutes. Whisk together cornstarch and 1 tbsp. milk. Whisk in eggs. Stir in hot rice mix. Stir in cherries and bring mixture just to boil. Stir in vanilla and lemon. Serve warm or cold.
Makes 6 portions.
