Ingredients (view qty in metric system instead)
4 cups + 1 tbsp. milk 1/2 cup medium or long grain white rice 1/2 cup sugar 1/2 tsp. ground cinnamon 1/4 tsp. salt 1 1/2 tsp. cornstarch 3 large eggs 1/2 cup dried cranberries 2 tsp. vanilla extract 1 tsp. fresh lemon juice
Directions
Combine 4 cups milk, rice, sugar, cinnamon and salt in a large saucepan. Heat to a boil, stirring frequently. Reduce heat and simmer, stirring occasionally, about 25 minutes until rice is very tender. Whisk together cornstarch and remaining 1 tbsp. milk in a medium bowl. Whisk in eggs. Whisk in rice mixture. Transfer to large saucepan and add cranberries. Cook, stirring, over low heat until mixture just comes to a boil. Stir in vanilla and lemon juice. Cool slightly. Serve warm or cold.
Serves 4 to 6.
