Vampires Skillet Fried Garlic Potatoes Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 to 3 pounds unpeeled russet or red potatoes
2 tbsp. butter
3 tbsp. vegetable oil
2 tbsp. olive oil
4 large cloves garlic, peeled and chopped
1/2 tsp. salt
1/2 tsp. pepper

Directions
Heat a large pot of lightly salted water to a boil. Add potatoes and boil about 15 minutes until just tender. Drain potatoes and cool to room temperature. Cut potatoes into quarters. Melt butter with vegetable and olive oils in a large skillet over medium heat. Add potato quarters and cook 5 minutes, stirring frequently. Increase heat to medium high and cook potatoes about 20 minutes, stirring frequently, until dark golden brown. Add garlic, salt and pepper and cook 3 minutes, stirring frequently. Serve hot.

Serves 6 to 8.
