Ingredients (view qty in metric system instead)
1/2 cup water 2 cups sugar 1 1/4 cups heavy or whipping cream pinch salt 2 tbsp. diced butter 3 tbsp. dark rum angel food or pound cake, cut into cubes stemmed strawberries peeled and thickly sliced bananas pineapple chunks
Directions
Combine the water and sugar in a large saucepan and bring to a boil over high heat. Boil the mixture about 15 minutes until light golden and the temperature reaches 300 degrees on a candy thermometer. Reduce the heat to medium and continue boiling the mixture until it reaches 350 degrees. Meanwhile, place the cream and salt in a small saucepan. Bring the cream to a simmer over medium heat. Remove the caramel mixture from the heat. Carefully, pour 1/4 of the hot cream into the caramel. Add remaining cream and whisk until smooth. Whisk in the butter and rum. Let the fondue mixture stand 20 minutes.
Transfer the warm fondue mixture to a bowl and serve with the cake, strawberries, bananas, pineapple, etc.
Serves 6 to 8.
