Ingredients (view qty in metric system instead)
Cupcakes: 2 1/4 cups cake flour 1 1/3 cups sugar 1 tbsp. baking powder 1/2 tsp. salt 3/4 cup orange juice 1/2 cup vegetable oil 1 tbsp. finely grated orange peel 5 large egg yolks 8 large egg whites 1/2 tsp. cream of tartar
Frosting: 3/4 cup sugar 3 tbsp. cornstarch 1/8 tsp. salt 3/4 cup orange juice 2 large egg yolks 1/2 tsp. orange extract 1 1/4 cups butter, room temperature 1 cup powdered sugar
Directions
For Cupcakes: Preheat oven to 325 degrees. Mix together flour, sugar, baking powder and salt in a large bowl. Beat in orange juice, oil, orange peel and yolks. In a separate bowl beat egg whites with cream of tartar to stiff peaks. Fold in flour mixture. Pour into 24 cupcake paper-lined muffin cups, filling 3/4 full. Bake about 20 minutes until tops are springy. Transfer pans to racks and cool completely.
For Frosting: Mix together sugar, cornstarch and salt in a small saucepan. Whisk in orange juice and heat to a boil. Cook, whisking constantly, about 1 minute until thickened. Place yolks in a medium bowl and whisk in orange mixture. Return to saucepan and cook, whisking, 1 minute. Cool to room temperature. Stir in extract. Beat butter in a large bowl until fluffy. Beat in orange juice mixture, then powdered sugar. Remove cooled cupcakes from muffin pans and frost.
Makes about 2 dozen cupcakes.
