Ingredients (view qty in metric system instead)
3 to 4 pounds turkey wings 2 medium onions, peeled and quartered 1 cup water 8 cups chicken broth, divided 2 medium carrots, peeled and chopped 2 ribs celery, chopped 4 sprigs fresh thyme or 1 tsp. dried 3/4 cup all purpose flour 2 tbsp. butter or margarine 1 tsp. pepper
Directions
Preheat oven to 400 degrees. Place wings in a large roasting pan along with onions. Roast about 75 minutes until wings are well browned. Transfer wings and onions to large pot. Add water to roasting pan and scrape up browned bits off bottom. Add contents of roasting pan to pot. Add 6 cups broth, carrots, celery and thyme. Heat to a boil. Reduce heat and simmer 90 minutes. Strain broth into a large saucepan and skim off fat. Whisk flour into remaining 2 cups broth. Bring broth in saucepan to a boil. Whisk in flour mixture and boil 4 to 5 minutes until thickened. Stir in butter and pepper. Can be served immediately or refrigerated up to 1 week or frozen up to 1 month.
Makes about 8 cups gravy.
