Ingredients (view qty in metric system instead)
Assorted ice cream flavors of your choice 3/4 cup butter 10 tbsp. sugar 1 large egg yolk 1 tsp. vanilla extract 1 1/4 cups all purpose flour 6 ounces melted white chocolate 6 ounces melted semisweet chocolate
Directions
Line a sheet pan with wax paper. Drop 1/3 cupfuls of ice cream onto the prepared pan. Flatten ice cream mounds and shape into 2 inch circles. Freeze ice cream.
Cream together butter and sugar in a large bowl. Beat in yolk, vanilla and flour. Mix until a soft dough forms. Line a sheet pan with wax paper. Roll dough to a 13x10 inch rectangle on a lightly floured surface. Transfer dough to the prepared pan and refrigerate until firm.
Preheat oven to 300 degrees. Using a floured glass or biscuit cutter, cut dough into 2 inch circles. Place dough circles on a parchment lined sheet pan and bake 20 minutes until cookies are firm. Transfer cookies to a rack and cool completely.
Line a sheet pan with wax paper. Dip half of each cooled cookie into melted white chocolate. Place dipped cookies on the prepared pan and refrigerate until set. Dip remaining half of each cookie into melted semisweet chocolate. Return cookies to the prepared pan and freeze until set.
To form ice cream sandwiches: Place each ice cream circle between 2 dipped cookies. Refreeze if desired or let stand a couple minutes at room temperature and serve.
Serves 6 to 8.
