Ingredients (view qty in metric system instead)
15 medium garlic cloves, peeled 4 tbsp. fresh rosemary or 3 tbsp. dried 2 tbsp. salt 1 1/2 tbsp. pepper 2 tbsp. olive oil 5 pound bone-in pork loin
Directions
Combine garlic, rosemary, salt and pepper in a blender or food processor and pulse to mince. With machine running, gradually drizzle in olive oil to form a thick paste. Place the pork, bone-side down, on a rack in a roasting pan. Rub the garlic paste all over pork and let stand 2 to 3 hours at room temperature. Preheat oven to 325 degrees. Roast meat for about 90 minutes until internal temperature reaches 150 degrees. Increase oven to 400 degrees and roast pork an additional 10 to 15 minutes until lightly browned. Transfer pork to a cutting board and loosely tent with foil. Let rest 20 to 30 minutes before slicing.
Serves 8 to 10.
