Ingredients (view qty in metric system instead)
16 pound fresh or fully defrosted turkey 1 tsp. salt 1 tsp. pepper your favorite stuffing 2 tbsp. molasses 2 tbsp. soy sauce
Directions
Preheat oven to 325 degrees. Rinse the turkey inside and out with cold water. Dry thoroughly with paper towels. Sprinkle the cavity with salt and pepper. Stuff cavity loosely and close with metal skewers. Tie the turkey's legs together and place on a rack in a large roasting pan. Stir together molasses and soy sauce in a small bowl. Roast turkey 2 1/2 hours, basting occasionally with pan juices. Paint turkey all over with molasses mixture using a pastry brush. Roast 60 minutes. Paint turkey again with molasses mixture and roast an additional 60 to 90 minutes until a thermometer in thigh reads 170 degrees and juices run clear, turkey skin will be very dark from glaze. Transfer turkey to a platter and let stand 20 minutes before carving.
Serves 12 to 16.
