Ingredients (view qty in metric system instead)
2 tsp. chili powder 3 cups chicken broth 15 ounce can Mexican-style stewed tomatoes, mashed coarsely 1 cup frozen corn kernels 1 cup lima beans 2 cups cooked diced turkey 1 cup coarsely broken tortilla chips 2 tsp. canned jalapeno chili, minced 1/2 tsp. salt 1/2 tsp. pepper
Directions
Place chili powder in a medium saucepan. Stir over low heat 1 minute. Add broth and tomatoes with juices. Increase heat and bring mixture to a boil. Add corn, lima beans, turkey, 1/3 cup chips and jalapeno. Simmer about 10 minutes until vegetables are tender. Season with salt and pepper. Divide soup into 2 bowls and sprinkle remaining chips over.
Serves 2.
