Ingredients (view qty in metric system instead)
1 1/2 tbsp. olive oil 1 large onion, peeled and chopped 3 stalks celery, chopped 1 1/2 pounds ground turkey 1 1/2 cups soft fresh breadcrumbs 2/3 cup oil-packed sun-dried tomatoes, drained and chopped 1/2 cup milk 2 large eggs 2 tsp. dried rubbed sage 2 tsp. dried oregano 2 tsp. salt 2 tsp. pepper 1/4 cup ketchup
Directions
Preheat oven to 375 degrees. Grease a 9x5 inch glass loaf pan. Heat oil in a medium skillet. Add onion and cook 5 minutes, stirring occasionally. Add celery and cook mixture 15 minutes, stirring occasionally, until very tender. Transfer vegetables to a large bowl. Add turkey, breadcrumbs, sun-dried tomatoes, milk, eggs, sage, oregano, salt and pepper and mix well. Transfer to prepared dish and form into a loaf. Bake 60 minutes. Brush ketchup over top and bake an additional 15 minutes until meatloaf reaches 165 degrees. Cool 5 minutes before slicing.
Serves 6.
