Ingredients (view qty in metric system instead)
1/4 cup olive oil 2 medium sized red or green bell peppers, julienned 1 1/2 cups diced onion 1/2 pound spicy lamb or beef sausage, sliced 1 tbsp. minced garlic 1 tsp. paprika pinch cayenne pepper 1 tsp. ground caraway seed 4 medium tomatoes, sliced 4 large eggs
Directions
Saute\' peppers, onion and sausage with olive oil in a deep skillet until tender. Add garlic, spices and tomatoes. Gently crack eggs and place on top of sausage mixture. Cover and poach until eggs reach desired doneness.
Serves 4.
