Ingredients (view qty in metric system instead)
1 cup unsweetened shredded coconut 1 1/2 cups boiling water 2 cups canned unsweetened pineapple chunks, drained 1/2 cup light rum 3 tbsp. fresh lime juice 2 tbsp. sugar 1/2 tsp. coconut extract
Directions
Combine shredded coconut and boiling water in a food processor and blend 1 minute. Let mixture stand 3 minutes. Strain coconut mixture though a fine sieve or doubled cheesecloth, pressing on solids. Discard solids.
Combine strained coconut liquid, pineapple chunks, rum, lime juice, sugar and coconut extract in a food processor. Blend until smooth. Strain smoothie mixture through a fine sieve or doubled cheesecloth, pressing on solids. Refrigerate smoothie mixture until cold. Divide between chilled glasses and serve.
Serves 4.
