Ingredients (view qty in metric system instead)
1/3 plus 1/4 cups sugar, divided 1/3 cup water 2 strips fresh lemon peel. yellow part only 2 tsp. fresh lime juice 4 lime slices 2 large ripe mangoes, peeled, pitted and chopped 2 cups crushed ice 3/4 cup light rum 1/2 cup soda water
Directions
Combine 1/3 cup water, 1/3 cup sugar and lemon peel in a small saucepan. Heat to a boil, stirring until sugar dissolves. Remove the pan from the heat and cool syrup completely. Strain the cooled syrup into a small bowl and stir in lime juice. Place the remaining 1/4 cup sugar on a small plate. Rub the rims of four, 8 ounce glasses with the lime slices. Dip the rims of the glasses in the sugar to coat. Combine the cooled sugar syrup, mangoes, crushed ice, rum and soda water in a blender. Puree until smooth. Divide the daiquiri mixture between the prepared glasses. Serve daiquiris immediately.
Makes 4 daiquiris.
