Triple Strawberry Cream Pie with Chocolate Crust

Ingredients (view qty in metric system instead)
Crust: 1 1/3 cups graham cracker crumbs 1 1/2 tbsp. sugar 1 1/2 tbsp. cocoa powder 5 tbsp. diced butter, room temperature
Filling: 3 pints fresh strawberries, stemmed, halved lengthwise 1/3 cup sugar 1 1/2 tsp. finely grated lemon peel 1 tbsp. plus 1 tsp. cornstarch 1 1/2 cups heavy or whipping cream 1/4 cup powdered sugar
Directions
For Crust: Combine graham crumbs, sugar and cocoa in a large bowl. Add butter and rub in with your fingers until a coarse meal forms. Transfer crumb mixture to a 9 inch pie pan. Press evenly into bottom and up sides of pan. Freeze crust 10 minutes. Meanwhile, preheat oven to 350 degrees. Bake crust 10 minutes. Transfer crust to a rack and cool completely. Cover crust and refrigerate 1 hour.
For Filling: Place half the strawberries in a large bowl. Stir in 1 tbsp. sugar and lemon peel. Let stand 10 minutes. Crush berries to a coarse puree with a fork. Transfer to a small saucepan. Stir together remaining 1/4 cup plus 1 tsp. sugar and cornstarch in a small bowl. Stir into puree. Bring to a boil over medium heat. Cook, stirring, 1 minute until mixture thickens. Transfer filling to a large bowl and cool to room temperature. Cover and refrigerate 1 hour. Whip cream with powdered sugar in a large bowl to stiff peaks. Fold in 1/2 cup filling. Spread remaining filling in bottom of prepared crust. Arrange remaining strawberry halves on top of filling. Spread strawberry hipped cream over top of berries. Serve immediately.
Serves 8.
