Ingredients   (view qty in metric system instead)
8 ounces dried red kidney beans, picked over and rinsed
1 1/2 pounds triangle tip steak
2 tbsp. olive oil
1 red onion, peeled and diced
1 yellow onion, peeled and diced
1 pound ground beef
1 pound ground pork
5 large tomatoes, cored, seeded and chopped
1 cup red wine
6 tbsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. cayenne pepper
1 cup grated Cheddar cheese

Directions
Place kidney beans in a large bowl with water to cover. Let beans soak overnight.

Drain beans and transfer to a large pot. Add enough water to the pot to cover beans. Heat to a boil over medium high heat. Reduce heat to medium low and simmer beans until slightly softened, stirring occasionally, about 20 minutes. Drain beans and reserve in a medium bowl. Meanwhile, preheat oven to 350 degrees. Place the triangle tip steak on a rack. Set the rack in a roasting pan and roast meat about 20 minutes until temperature reaches 120 degrees. Cool steak completely. Cut into strips. Heat oil in a large pot over medium heat. Add yellow and red onions and cook about 10 minutes until tender, stirring occasionally. Add ground beef and pork to the pot and cook about 10 minutes until browned, breaking up clumps. Add kidney beans, chopped tomatoes, wine, chili powder, salt, pepper and cayenne to the pot. Simmer, stirring occasionally, about 45 minutes until beans are tender. Add steak strips and Cheddar. Stir until cheese is melted. Ladle chili into bowls and serve.
