6 tbsp. butter 2 ounces unsweetened chocolate, chopped 4 ounces bittersweet chocolate, chopped 1 tsp. instant coffee powder 1/4 cup hot water 1/4 cup unsweetened cocoa powder 1 cup sugar 2 large eggs 1 tbsp. vanilla extract 2/3 cup cake flour 1/2 tsp. baking powder 1/8 tsp. salt
Directions
Preheat oven to 350 degrees. Line the inside of an 8 inch square baking pan with foil. Combine butter, unsweetened and bittersweet chocolates in a large microwaveable bowl. Microwave chocolate 1 to 1 1/2 minutes until partially melted. Whisk chocolate until smooth. Place the hot water in a small bowl. Stir in coffee powder until dissolved. Whisk in cocoa until smooth. Whisk the coffee mixture into the melted chocolate. Whisk in sugar, eggs and vanilla. Sift the flour, baking powder and salt into the batter and stir until combined. Pour the batter into the prepared pan. Bake about 30 to 35 minutes until a toothpick comes out with a few moist crumbs. Transfer the pan to a rack and cool brownies completely. Remove the cooled brownies from the pan using the foil as an aid. Peel the foil off the brownies. Cut brownies into squares and store in an airtight container.
