Ingredients (view qty in metric system instead)
1 1/2 tsp. minced garlic 2 stalks celery, chopped 1/2 cup chopped onion 3/4 cup chopped carrot 3 tbsp. butter 8 cups chicken broth 4 cups water 20 ounces dry cheese filled tortellini 2 tbsp. chopped fresh parsley 1/2 tsp. pepper 1 tsp. ground nutmeg
Directions
Cook garlic, celery, onion and carrot with butter in duch oven or stockpot, until tender. Stir in broth and water. Bring to a boil. Stir in tortellini, cover, and simmer 20 minutes or until tortellini is tender. Stir in parsley, pepper and nutmeg. Simmer 10 minutes. Serve with grated parmesan cheese.
Serves 6 to 8.
