Ingredients (view qty in metric system instead)
8 pounds tomatoes, skinned, chopped and placed in a large bowl. 6 lemons or 3 oranges and 3 lemons 8 sticks cinnamon 15 to 20 whole cloves Sugar
Directions
Let the tomatoes sit for a few minutes and then drain them. Measure and put into a large kettle. Finely slice citrus, being careful to remove all seeds. Do not peel. Add citrus, cinnamon sticks and a few whole cloves. Add 1 cup sugar for each cup of tomatoes. Bring to a boil, stirring to dissolve sugar. Keep stirring to prevent sticking until candy thermometer reads 220 degrees. Remove cinnamon sticks and most of the cloves.
Place in hot, sterilized jars and seal with melted paraffin.
Makes about 12 cups.
