Ingredients (view qty in metric system instead)
2 tbsp. olive oil 2 large onions, peeled and chopped 3 cups chopped celery 2 1/2 tbsp. minced garlic 2 tsp. chopped seeded jalapeno chilies 2 tbsp. ground cumin 6 cups chicken broth 15 ounce can tomato sauce 1 1/2 cups chopped fresh cilantro, divided 4 cups tortilla chips 1/2 tsp. salt 1/2 tsp. pepper
Directions
Heat oil in a large pot. Add onions and celery and cook until tender, about 15 minutes, stirring occasionally. Add garlic and jalapenos and cook 2 minutes. Add cumin and cook, stirring, 1 minute. Add chicken broth, tomato sauce and 1 cup cilantro. Simmer 20 minutes, stirring occasionally. Stir in chips and simmer 10 minutes. Puree soup in a blender until smooth. Return soup to pot and bring to a simmer. Season with salt and pepper. Sprinkle with remaining cilantro before serving.
Serves 6 to 8.
