Ingredients (view qty in metric system instead)
2 tbsp. vegetable oil 1 1/2 cups peeled, chopped sweet onions 1 pound sweet potatoes, peeled and cut into 1 inch cubes 1 pound russet potatoes, peeled and cut into 1 inch cubes 1 tsp. salt 1/4 tsp. pepper pinch cayenne pepper 6 cups water 15 ounce can Italian style plum tomatoes, drained and chopped 4 slices crisply cooked bacon, crumbled
Directions
Heat oil in a large saucepan. Add onions and cook about 10 minutes, stirring occasionally, until golden. Add sweet potatoes and russets and stir to coat with oil. Add salt, pepper, cayenne and water and heat to a boil. Reduce heat and simmer about 30 minutes until potatoes are very tender. Transfer 3/4 of potatoes to a food processor and puree. Stir puree back into soup. Stir in tomatoes and simmer 15 minutes. Ladle soup into bowls and garnish with crumbled bacon.
Makes about 2 quarts soup.
