Ingredients (view qty in metric system instead)
Marinade: 1/4 cup soy sauce 2 tbsp. grated fresh ginger 2 cloves garlic, minced 1 tsp. cornstarch 1 tsp. sugar 1 pound sirloin tip, thinly sliced
Vegetables:
4 tbsp. vegetable oil, divided 1 pound medium tomatoes, cored and quartered 4 stalks celery, cut into 1 inch pieces on the diagonal 6 green onions, cut into 1/2 inch pieces 1 medium green bell pepper, chopped 1 medium onion, peeled and cut inyo 1/2 inch strips 2 tsp. cornstarch 3/4 cup water 1 tsp. soy sauce freshly cooked hot rice
Directions
For Marinade: Stir together soy sauce, ginger, garlic, cornstarch and sugar in a large bowl until smooth. Add meat and turn to coat. Let meat marinate 10 minutes at room temperature. Remove meat and discard marinade.
For Vegetables: Heat 2 tbsp. oil in a large skillet. Add meat and stir-fry 2 minutes. Reserve meat. Add remaining 2 tbsp. oil to skillet. Add tomatoes, celery, green onion, bell pepper and onion until crisp-tender. Reduce heat. Stir together cornstarch, water and soy sauce in a small bowl. Add to vegetables and cook, stirring, until thickened, about 2 minutes. Stir in meat and simmer 3 to 4 minutes until heated through. Serve over rice.
Serves 4.
