Ingredients   (view qty in metric system instead)
twelve 2 ounce pork tenderloin medallions
2 tbsp. olive oil
2 medium shallots, chopped
1 large clove garlic, peeled and minced
2 cups cored, peeled and diced tomatoes
1/4 cup chopped green onions
2 tbsp. chopped fresh basil leaves
1/4 cup dry white wine


Directions
Flatten pork medallions with a mallet. Heat oil in a large skillet. Add pork, shallots and garlic and saute' 3 minutes. Add tomatoes, green onions, basil and wine and simmer 2 minutes. Divide pork between plates and spoon sauce over.

Serves 6.
