Ingredients (view qty in metric system instead)
2 cups prepared stuffing mix 1 cup grated Swiss cheese, divided 1 large egg, beaten to blend 1/4 cup chopped fresh parsley leaves 1 tsp. dried basil, crumbled 1/4 cup chopped green onions 1/4 tsp. salt 1/4 tsp. pepper 2 tbsp. olive oil, divided 18 large white mushrooms, stems and gills removed, cap hollowed out slightly
Directions
Preheat oven to 400 degrees. Place stuffing in a large bowl and break up with a fork. Stir in 3/4 cup Swiss cheese, egg, parsley, basil, green onions, salt, pepper and olive oil. Fill the hollowed mushroom caps with the stuffing mixture, mounding slightly. Place mushrooms on a sheet pan and drizzle with remaining 1 tbsp. olive oil. Sprinkle with remaining 1/4 cup Swiss cheese. Bake mushrooms about 15 minutes until stuffing is golden brown. Serve immediately.
Makes 18 mushrooms.
