16 ounces ground Italian sausage 1/4 cup plus 1 tbsp. olive oil two 12 ounces loaves focaccia bread, cut into 1 inch cubes 1 tsp. pepper 1 cup shredded Parmesan cheese 1 cup diced green bell pepper 1/2 cup oil packed sun dried tomatoes, chopped 1/2 cup pimiento stuffed green olives, chopped 4.25 ounce can sliced black olives, chopped 1 tsp. dried basil leaves 2 cloves garlic, peeled and minced 2 large eggs 1 1/2 cups white wine 1/4 cup butter, diced
Directions
Preheat oven to 350 degrees. Butter the inside of a 9x13 inch baking dish. Combine ground sausage and 1 tbsp. plive oil in a large skillet over medium high heat. Cook until sausage is browned, breaking up clumps. Toss together the focaccia cubes, remaining 1/4 cup olive oil and pepper in a large bowl. Spread the bread mixture on a sheet pan and bake about 10 minutes until the bread is crisp and lightly browned. Transfer the bread mixture to a large bowl and stir in browned sausage, Parmesan, green pepper, sun dried tomatoes, green and black olives, basil and garlic. Whisk together the eggs and wine in a medium bowl and pour over the stuffing mixture. Toss well to coat bread. Transfer the stuffing to the prepared dish and bake about 35 to 40 minutes until heated through. Serve hot.
Serves 8 to 10.
