1 1/2 pounds sourdough bread slices, cut into 1 1/2 inch cubes 4 tbsp. butter 1/4 cup olive oil 1 large onion, peeled and thinly sliced 4 ribs celery, thinly sliced 1/2 tsp. salt 1/4 tsp. pepper 1 1/4 pounds cooked ham, cut into 1/2 inch cubes 1 tsp. dried sage leaves 1 tsp. dried thyme 8 ounces shredded extra sharp Cheddar cheese 3 1/2 cups turkey or chicken broth
Directions
Preheat oven to 350 degrees. Grease the inside of a 9x13 inch baking dish. Place the soudough bread cubes and bake until toasted, stirring frequently. Transfer the toasted bread cubes to a large bowl. Increase the oven to 375 degrees. Combine the butter and olive oil in a large skillet over medium heat. Add the onion, celery, salt and pepper to the skillet and cook about 10 minutes until vegetables are softened, stirring frequently. Stir in the cubed ham, sage and thyme and cook 1 minute, stirring frequently. Pour the ham mixture over the toasted bread cubes. Add the cheddar and broth and stir until the liquid is absorbed. Transfer the stuffing to the prepared dish. and cover with foil. Bake the stuffing 35 minutes. Uncover the dish and bake the stuffing an additional 15 minutes until the top is slightly crisped. Serve stuffing hot.
Serves 8 to 12.
