Ingredients (view qty in metric system instead)
6 scallions 1 1/2 cups sliced mushrooms, 4 oz 2 eggs 2 pounds ground beef 1/2 cup + 2 tablespoons teriyaki glaze 1 cup plain dry breadcrumbs 1 1/2 teaspoons ground ginger 3/4 teaspoon garlic powder 2 pounds carrots peeled, cut into 2"x1/2" pieces 2 tablespoons oil 1/4 teaspoon salt 1/8 teaspoon pepper
chopped fresh cilantro, sliced scallions and rice, (optional)
Directions
Preheat oven to 375 degrees. In food processor process scallions and mushrooms until finely chopped. In large bowl lightly beat eggs; stir in mushroom mixture, beef, 1/2 cup teriyaki, breadcrumbs, 1 teaspoon ginger & 1/2 teaspoon garlic powder. In roasting pan shape mixture into 10"x5" loaf. In seperate roasting pan mix carrots, oil, salt, pepper and rest of ginger and garlic powder. Place meatloaf on center rack and carrots on lower rack. Bake 50 minutes. Spoon glaze over meatloaf. Bake 10 minutes or until meatloaf is cooked through and carrots are tender. If desired, toss carrots with cilantro, garnish meatloaf with scallions and serve with rice.
Makes 8 servings.
